| dc.description.abstract | Penelitian ini bertujuan untuk mengetahui pengaruh metode deboning terhadap sifat fisik dan mikrobiologis daging sapi. Materi yang digunakan yaitu 15 belahan karkas kiri dari Sapi Brahman Cross dengan kisaran bobot badan 400 - 425 kg. Metode penelitian menggunakan rancangan acak lengkap dengan 3 perlakuan dan 5 ulangan. Perlakuan-perlakuan tersebut adalah hot deboning tradisional (HBT), hot deboning (HB) dan Cold deboning (CB). | id |
