Eel (Anguilla bicolor bicolor) is a fishery commodity that has high nutritional value and a fairly high price. Eel meat has the highest proportion, which is 47.5%, so it is widely used in the form of fillets. The purpose of this study was to determine the antioxidant activity and bioactive compounds of eel (Anguilla bicolor bicolor) in three different body parts including skinless, skin, and skin on with fresh and steamed treatment. The body parts of the eel were then given steam treatment using a steamer (60–70oC, 15–20 minutes). Body parts of fresh and steamed eel were positive for alkaloid bioactive compounds using both methanol and ethyl acetate as solvents. Antioxidant activity on body parts of eel (Anguilla bicolor bicolor) with steam treatment was higher than that on fresh body parts of eel (Anguilla bicolor bicolor).
