Abstract: | Ikan sidat (Anguilla bicolor bicolor) merupakan komoditas perikanan yang memiliki nilai gizi tinggi serta harga yang cukup tinggi. Daging ikan sidat memiliki proporsi paling banyak yaitu sebesar 47,5%, sehingga banyak dimanfaatkan dalam bentuk fillet. Tujuan penelitian ini menentukan aktivitas antioksidan dan kandungan komponen bioaktif ikan sidat (Anguilla bicolor bicolor) pada tiga bagian tubuh yang berbeda meliputi daging (skinless), kulit (skin) dan daging beserta kulit (skin on) dengan perlakuan segar dan kukus. Bagian tubuh ikan sidat kemudian diberi perlakuan kukus menggunakan alat pengukusan (60–70oC, 15–20 menit). Bagian tubuh ikan sidat segar dan kukus positif kandungan senyawa bioaktif alkaloid baik menggunakan pelarut metanol dan etil asetat. Aktivitas antioksidan pada bagian tubuh ikan sidat (Anguilla bicolor bicolor) dengan perlakuan kukus lebih tinggi dibandingkan bagian tubuh ikan sidat (Anguilla bicolor bicolor) segar. Eel (Anguilla bicolor bicolor) is a fishery commodity that has high nutritional value and a fairly high price. Eel meat has the highest proportion, which is 47.5%, so it is widely used in the form of fillets. The purpose of this study was to determine the antioxidant activity and bioactive compounds of eel (Anguilla bicolor bicolor) in three different body parts including skinless, skin, and skin on with fresh and steamed treatment. The body parts of the eel were then given steam treatment using a steamer (60–70oC, 15–20 minutes). Body parts of fresh and steamed eel were positive for alkaloid bioactive compounds using both methanol and ethyl acetate as solvents. Antioxidant activity on body parts of eel (Anguilla bicolor bicolor) with steam treatment was higher than that on fresh body parts of eel (Anguilla bicolor bicolor). |
