Abstract: | Ikan nila merupakan spesies ikan air tawar yang banyak dibudidayakan serta memiliki nilai ekonomis tinggi. Mempertahanankan mutu ikan agar baik sampai ke tangan konsumen dapat dilakukan menggunakan metode pemingsanan. Ekstrak daun kemangi merupakan bahan anestesi yang efektif pada proses pemingsanan ikan karena mengandung senyawa eugenol. Gliserol dapat mencegah penggumpalan molekul air dan kristalisasi es pada titik beku larutan. Penelitian ini bertujuan menentukan konsentrasi terbaik dari kombinasi ekstrak daun kemangi dan larutan gliserol terhadap pemingsanan ikan nila dan menentukan survival rate pada ikan nila yang diberi kejutan suhu beku pada durasi waktu yang berbeda. Rancangan percobaan yang digunakan adalah rancangan acak lengkap dua faktor perlakuan dengan tiga kali ulangan. Faktor pertama adalah konsentrasi ekstrak daun kemangi (10; 15; 20%). Faktor kedua adalah konsentrasi larutan gliserol (8; 10; 12%). Konsentrasi terbaik ekstrak daun kemangi dan larutan gliserol yang diperoleh, yaitu 10%. Tingkat kelangsungan hidup ikan nila setelah diberi kejutan suhu beku -13oC yaitu 100% pada selang 90 hingga 120 menit. Tilapia is the most widely cultivated freshwater fish species and has high economic value. Keeping a good quality of fish till the consumers could be done through a stunning method. Basil leaf extract is an effective anesthetic agent for stunning of fish caused by its eugenol compounds. Glycerol can prevent the formation of water molecules and crystallization of ice at the solution freezing point. The Goals of study is to determine the best concentration of basil leaf extract and glycerol solution to stunning tilapia and determine the survival rate of tilapia which were subjected to freezing temperature shock at different durations of time. The experimental design used was a two-factor completely randomized design with three replications. The first factor was the concentration of basil leaf extract (10; 15; 20%). The second factor was the concentration of the glycerol solution (8; 10; 12%). The best concentration of basil leaf extract and glycerol solution obtained was 10%. The survival rate of tilapia after being frozen at -13oC was 100% at a freezing temperature shock interval of 90 to 120 minutes. |
