Abstract: Kappaphycus alvarezii merupakan salah satu jenis rumput laut yang banyak dibudidayakan. K. alvarezii diketahui memiliki biopigmen dalam tubuhnya, antara lain kelompok fikobiliprotein, klorofil dan karoten. Kelompok pigmen fikobiliprotein merupakan pigmen dominan dalam rumput laut jenis K. alvarezii Penelitian bertujuan untuk mendapatkan kadar pigmen dan antioksidan terbaik dari rumput laut menggunakan waktu maserasi berbeda. Penelitian ini menggunakan Rancangan Acak Lengkap dengan uji lanjut Duncan. Ekstrak K. alvarezii waktu ekstraksi 3 jam merupakan perlakuan terbaik dengan konsentrasi pigmen fikoeritrin 0.0220 mg/mL, fikosianin 0.0064 mg/mL, allofikosianin 0.0068 mg/mL, karoten 0.0161 mg/g, dan klorofil 0.0091 mg/g. Aktivitas antioksidan diperoleh menggunakan metode CUPRAC. Hasil aktivitas antioksidan tertinggi terdapat pada perlakuan waktu maserasi 3 jam 31.44 μg/mL asam askorbat per g ekstrak.
Kappaphycus alvarezii is a type of seaweeds that is widely cultivated. K. alvarezii contain biopigments in its body including clorophyl, carotene, and phycobiliprotein. The phycobiliprotein pigment group is dominant pigment can be found in the thallus of this type of seaweed. The aim of this study was to obtain the best time maceration on pigment and antioxidant value. Completely Randomized Design (CRD) was used in this study with Duncan as further test. K. alvarezii extract with a maceration time of 3 hours is the best treatment with a pigment concentration of 0.0220 mg/mL of phycoeritrin, 0.0064 mg/mL of phycocyanin, 0.0068 mg/mL of allophycocyanin, 0.0161 mg/g of carotene, and 0.0091 mg/g of chlorophyll. Antioxidant activity was carried out using the CUPRAC method. The highest antioxidant activity was found in 3 hour maceration time treatment 31.44 μg / mL of ascorbic acid per g of extract.
