      Abstract
      Proses pemurnian dapat memperbaiki sifat fisik dan kimia minyak ikan lele. Penambahan antioksidan sebelum pemucatan akan melindungi minyak dari proses oksidasi yang diakibatkan oleh panas pada tahapan pemurnian. Minyak ikan lele mengandung asam lemak esensial yang kerusakannya dapat diminimalisir oleh penambahan antioksidan sebelum proses pemurnian.
