dc.description.abstractIn order to elucidate the physical and chemical properties of the four Indonesian commercial pineapple of Subang, Bogor, Blitar and Palembang, and chemical characteristic change in fresh cut state during storage on 5°C for 12 days. Physical and chemical characteristic evaluation were using pineapple fruit harvested from Subang, Bogor, Blitar and Palembang fields, which arranged under a Completely. Randomized Design consisted of tWenty replications for each commercial type. Variance analysis results indicated that these commercial types showed dif(erences for 13 physical and chemical characteristics. Pineapple from Subang showed higher fruit size, total soluble solid, and Vitamin C. However, pineapple fruit from Bogor and Subang showed better sugar/acid ratio. Correlation test revealed that fruit weight was positively correlated with total weight and total acidity, total soluble solid•bas a negative correlation with to water content, and vitamin C was negatively correlated with fruit firinness. In fresh cut state, the pineapple fruits showed decreasing in total acidity, vitamin C contents, and total soluble solid, however, they show higher sugar/acid ratio after three days storage.en
