dc.description.abstractMineral addition can be used to enhance activity and stabilization of phytase. The aims of this study were to investigate effect of minerals, by addition of some minerals LP, Mg2, Zn2, Fez, Cat', Mn2, Cu2', Ni2', and Nit' at several concentrations 0, 0.5, 1.0, 2.0, 2.5, and 3.0 mM. Effect of mineral addition on enzyme stability during storage 0, I, 2, 3, 4. 5, and 6 weeks was also Investigated. The most effective concentration of mineral Li2' was 0.5 mM, givi.g the highest activity I.e. 281.3%. MIneral Fe1' and Na2' were an effective activator at 1.0 mM concentration, giving tie highest activity I.e. 350 and 144.1%, respectively. Minerals Mg2' and Zn2' were effective stabilizers at 1.5 mM concen tration, that Increased the activity of 87.5 and 75%, respectively. On the other hand minerals Ca2' at 0.5 and 1.0 mM concentration act as activator, whereas Mn2', Ni', and Cu2' minerals act as inhibitors. Furthermore 0.5 mM Liz', Nat', Cu", Ni2', md Fe2' at 1.0 mM could minimize the rate of degradation of phytase activity during storage at 4C, wheress other minerals accelererated of phytase degradation.en
