      Pengemasan secara Atmosfir Termodifikasi pada Buah Pepaya (Carica Papaya L) Terolah Minimal

      Abstract
      Pengolahan minimal merupakan serangkaian perlakuan yang ditujukan untuk menghilangkan bagian-bagian buah yang tidak diinginkan sehingga mempercepat penyajian. Tujuan penelitian adalah untuk mengkaji pengaruh suhu pada laju respirasi, mengkaji simulasi pengemasan Modified Atmosphere Packaging (MAP) dan mengkaji pengaruh jenis kemasan pada pengemasan buah pepaya terolah minimal. Suhu berpengaruh pada laju respirasi, semakin tinggi suhu penyimpanan semakin tinggi laju respirasi dan sebaliknya. Pada suhu 10°C laju konsumsi O2 sebesar 5.80 ml/kg.jam dan laju produksi CO2 12.19 ml/kg.jam, lebih besar dibandingkan laju respirasi pada suhu 5°C, yaitu sebesar 3.2 ml/kg.jam untuk O2 dan 7.31 ml/kg.jam untuk CO2. Berdasarkan dari hasil simulasi yang telah dilakukan terhadap tiga jenis kemasan yang berbeda untuk mendapatkan konsentrasi gas yang optimum ,untuk WSF, diperoleh nilai berat, tebal film plastik, luas area kemasan secara berturut-turut adalah 0.13kg, 0.017mm, 0.0198 m2, sedangkan SF 0.14 kg, 0.02 mm, 0.0198 m2 dan untuk LDPE adalah 0.1 kg, 0.025 mm, 0.025 m2.
       
      Minimal processing is a series of treatments aimed for eliminating the unwanted parts of fruits to simplify serving. Modified Atmosphere Packaging (MAP) is product packaging using the materials that allows the passage of gas in the package to be exchanged. The purpose of the study is to assess the effect of temperature on respiration rate, to review MAP simulation and to study the effect of different film MAP packagings on minimally processed papaya fruit packaging. The higher the storage temperature the higher the rate of respiration, vice versa. The O2 consumption rate is 5.80mL/kg.hour, and CO2 production rate is 12.19mL/kg.hour at temperature of 10°C, each value of respiration is greater than the rate of respiration at 5°C, which are 3.2mL/kg.hr for O2 consumption and CO2 production rate is 7.31mL/kg.hr. Based on the results of simulations that have been conducted on three different types of packaging to get optimum gas concentrations of 3-5% of O2 and 5-10% of CO2 WSF, the value of weight, thickness of plastic films, and area are 0.13kg, 0.017mm, 0.0198m2, whereas SF 0.14 kg, 0.02 mm, 0.0198 m2 and for LDPE is 0.1 kg, 0.025 mm, 0.025m² respectively.
