Pengaruh Pemberian Pangan Antioksidan terhadap Kadar Malondialdehid dan Profil Lipid Darah pada Mahasiswi Pengonsumsi Gorengan
Abstract
Consumption of fried foods can increase malondialdehyde (MDA), triglycerides, total cholesterol, and LDL cholesterol but decrease HDL cholesterol in blood plasma. Antioxidant foods such as green grass jelly drinks, tomato juice, papaya and tea can be an alternative to reduce those negative impacts. The objective of this study was to analyze the effect of antioxidant foods (green grass jelly drinks, tomato juice, papaya and black tea) on blood levels of MDA and lipid profile of coed consuming fried foods. The study was conducted with pre-post test control design. The antioxidant foods were given in a single serving size per day during 21 days. All of the subjects who consumed fried foods had high MDA levels in pre-intervention. The results of this study showed that MDA level in the group of green grass jelly drink decreased significantly (p<0.05). The statistical test of lipid profile levels also showed significantly increasing in LDL cholesterol in green grass jelly drinks group and HDL cholesterol in tomato juice group (p<0.05). Furthermore, total cholesterol and LDL cholesterol in tea group declined significantly (p<0.05). There was no effect of papaya intervention in MDA and lipid profile levels.
