      Abstract
      Indonesian community dependence on rice as a staple food consumption increased along with the increase of population. One of the efforts made by way of food diversification effort to replace the need for staple food besides rice. Purpose of this study is to get formulating optimization models in simulated rice with characteristics and nutrient content of rice is the preferred approach public (Ciherang rice). Linear programming models are minimize of amylose = 25.44GR + 31.02GY + 27.86TK + 25.05UP + 22.83JP + 29.07SG + 14.13TB + 28.18AN + 25.88SM + 21.12SN which is the objective function, and constraint functions all nutritional content should be greater than Ciherang rice (as standard). Analysis based on the calculation of the QM program produces mixture of arrowroot starch 30%, beneng taro flour 33.09%, sorghum flour 36.91% resulting in a 21.86% amylose and prices of raw materials required for the manufacture of simulated rice is Rp7 523.17/kg.
       
      Tingkat ketergantungan masyarakat Indonesia terhadap konsumsi beras sebagai makanan pokok semakin men ingkat sejalan dengan bertambahnya jumlah penduduk. Salah satu upaya yang dilakukan dengan cara usaha diversifikasi pangan dengan menggantikan kebutuhan pangan pokok selain beras. Tujuan penelitian ini adalah mendapatkan model optimasi dalam pembuatan formulasi simulated rice dengan metode linear programming untuk menghasilkan simulated rice dengan karakteristik dan kandungan gizi yang mendekati beras yang disukai masyarakat (beras Ciherang). Model linear programming adalah meminimalkan amilosa =25.44 GR+31.02G Y + 27.86TK + 25.05UP + 22.83JP + 29.07SG +14.13TB + 28.18AN+ 25.88SM + 21.12SN yang merupakan fungsi tujuan dan fungsi kendala adalah semua kandungan gizi bahan harus lebih besar dari beras Ciherang sebagai standarnya. Berdasarkan analisis perhitungan dari program QM menghasilkan campuran bahan dari pati garut 30%, tepung talas beneng 33.09% dan tepung sogum 36.91%, menghasilkan amilosa sebesar 21.86% dan harga bahan baku yang dibutuhkan untuk pembuatan produk simulated rice sebesar Rp7523.17/kg.
