      Abstract
      Preferensi permintaan masyarakat terhadap kuantitas, kualitas dan penampilan buah-buahan menbgkat sejalan dengan semakin meningkatnya kesadaran akan pentingnya buah-buahan sebagai pelengkap gizi dan semakin terbatasnya waktu yang tersedia di luar urusan kinerja akibat berbagai faktor. Kondisi ini memberi peluang untuk dipasarkannya buah terolah minimal yang terkesan lebih praktis. Buah terolah minimal bersifat mudah rusak baik selama penanganan maupun selama penyimpanan. Salah satu alternatif yang diharapkan dapat menekan laju penurunan mutu dan memperpanjang umur simpan buah terolah minimal adalah melapisinya dengan suatu film yang dapat dimakan dikombinasikan dengan penyimpanan pada suhu rendah.
       
      Increasing of consumers awareness on health has led to a better preference on fruits for their food consumption. At the same time they have less time to prepare their meals at their home as a result of more time used for their job outside their home. Such life trends give an opportunity for minimally processed fruits to enter food markets.
