Pola Perubahan Mono dan Diasilgliserol dalam Reaksi Etanolisis Minyak Sawit Mentah

Abstract

The changing pattern of mono and diacylglycerol concentration as ~sponto reaction time dun'ng ethanolysis of c ~ dpea lm oil was influenced by the ratio of elhanoVCP0. By using the ratio of0.25-0.5, the changing pattem of MAG concentration followed the parabdic curve, while that of DAG. By using the ratio of ethanoUCP0 of 1.5, the change of MAG concentration fdloW polynomyal curve, while that of DAG followed hypeMic curve. The changing pattem of MAG & DAG concentration during ethano/ysis reaction of etude palm oil may be caused by difference of reactivity and position of fatty acid as well as reactivtty of lipid group (TAG, DAG, and MAG).
