      Abstract
      Until now, various processes to produce fructose from different starch like inulin have been developed. Inulin can be found in many plants, such as Dahlia plnnata Cav. that call be cultivated also il/ Indonesia. An alternative process for a fructose production from inulin is by acid hydrolysis. In the present study, the hydrolysis process with acid solution was investigated. Inulin was diluted in acid solution (hidrogen chloride acid, oxalic acid, tricltloroacetic acid or TeA, and trifluoroacetic acid or TFA) with different concentrations (0.05 N. 0.1 N, and 0.2 N) and varied hydrolysis time at 121°C (I, 2, J, alld" hours). The principal parameters analysed were reducing sugar content, yield of reducing sugar cOlltellt, and the colour of fructose syrup. The best result obtained using the three acids (HCl, oxalic acid, alld TF A) ;s at the cofl«lltration of 0.05 N with hydrolysis time of I hour. Meanwhile for TCA the best results for reducing sugar and yield were obtained tlIthe concentration of 0.2 N with hydrolysis time of I hour 09.94 giL, al/d 99.84%. respectively). The best result for colour (4.75 unit colour) was obtained using TCA 0.05 N. II/ulil/ used ill lhis study was obtained by tnOdified precipitation.purijication process which produced the illulin wilh moisture content of 3.0%, inulin content of 71.2% and starch inulin purity of99.8%.
