      Abstract
Advances in enzymology are enabling commercial production of more industrial microbial enzymes and consequently multiplying the applications where they can offer advantages over traditional processes and ingredients. In addition to its simplicity of the process, economically production costs and its production is still possibly improved, the enzymatic bioprocessing is becoming an alternative technology which has a prospective future for industrial purposes of food, pharmaceutical and cosmetics. Some glycosides with interesting biological activities can be used in medicine or cosmetics. For example, arbutin has been used in cosmetics because of its inhibition of tyrosinase. Chemical synthesis of these polyphenol glycosides was widely used at first, however, substrates contain multiple hydroxyl groups of similar reactivity and chemical methods are complicated by the many protection and deprotection steps that are necessary for regioselective synthesis. The Lise of enzymes in the synthesis of the giycoside has not been extensively investigated, yet it offers several advantages over chemical methods. M'e have repolted ihe potency of several extracellular microbial enzymes such as amylase and CGT-use, protease and lipase for biosynthesis and bioprocessing of cyclodextrin, fermented coconut oil, respectively. The Iipase was furthermore used for hydrolysis of acid oils of CPO for producing valuable fatty acid esters to meet the requirement of cosmetics, pharmaceuticals and other chemical industries. The review of our previous research is a~n~erod c larify some potencies of crude enzymes which were derived from various sources of microorganism strains. The selected strains with activities of amylase, protease, lipase, dan CGT-use on many kinds of natural substrates containing starch, protein, lipid and oil were furthermore applied for synthesis of valuable biornaterials to meet the requirement for industries of mentioned above.
