Kajian Perubahan Mutu Buah Mangga Gedong Gincu Selama Penyimpanan Dan Pematangan Buatan

Abstract

The objective of this research is to evaluate quality changes of mango var. Gedong Gincu during storage and artificial ripening process based on some parameter that is respiration rates, weight loss, total soluble solid, firmness, colour and organoleptic. The result show that the temperature of storage and artificial ripening have significant effect to respiration rates, weight loss, total soluble solid, firmness, colour and organoleptic. High temperature of storage and artificial ripening hence cimateric rise progressively. From the result of research, organoleptic score to temperature of storage and artificial ripening increasing until fourth day after artificial ripening. This matter is possibility indication not yet been perfect maturation process, it means mango can kept longer time.
