      Pengembangan Selai Kacang Tanah (Arachis hypogaea L.) dengan Substitusi Oncom Hitam untuk Kelompok Balita

      Abstract
      Oncom hitam merupakan salah satu pangan lokal fermentasi yang memiliki banyak potensi, salah satunya daya cerna protein yang lebih tinggi dari kacang tanah biasa. Oncom hitam dapat dikembangkan menjadi selai kacang tanah oncom hitam sebagai pencegahan KEP (Kurang Energi Protein) pada balita. Penelitian ini bertujuan untuk mengembangkan formula selai kacang tanah oncom hitam sebagai produk pangan alternatif sumber protein bagi balita. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktor yaitu kacang tanah dan oncom hitam serta terdiri dari tiga formula. Hasil penelitian menunjukkan bahwa terdapat perbedaan nyata pada hasil uji hedonik dengan atribut rasa, aroma, tekstur, warna dan keseluruhan. Formula selai kacang tanah oncom hitam yang terpilih yaitu F1 dimana persentase oncom hitam dan kacang tanah adalah 50%:50%. sebesar 66 kkal, 3,5 g protein, 4,4 g lemak dan 2,8 g karbohidrat per takaran saji. Formula terpilih memiliki daya cerna protein sebesar 94%. Formula ini memiliki kontribusi terhadap AKG sebesar 4,7% energi, 14% protein, 8,8% lemak dan 3,1% karbohidrat. Produk dapat menggunakan klaim tinggi protein karena memiliki 111% ALG protein balita.
       
      Black oncom is a fermented local product full of potential such as higher protein digestibility. It can be developed into peanut spread with black oncom substitution as a prevention of Protein Energy Malnutrition (PEM) in toddlers. The study aimed to formulate black oncom peanut spread product for toddlers This study consisted of three formulas using factorial randomized design with two factors, the ratio of peanut to black oncom. Hedonic test analysis showed that there was a significant difference between flavor, aroma, color, texture and overall attribute. The chosen formula was F2 with 50:50 ratio of black oncom and peanut. F2 contained 66 kcal energy, 3.5 g protein, 4.4 g fat dan 2.8 g carbohydrate per serving. This formula has 94% protein digestibility value. One serving of this product contributes 4.7% energy, 14% protein, 8,8% fat and 3.1% carbohydrates to toddler AKG. The product could use high protein nutritional claim as it exceeded ALG requirement for toddler protein which was 111% protein ALG.
