dc.description.abstractRice analog is expected could reduce the dependency on consuming rice in Indonesia. Th e study aimed to characterize lindur fl our, determine formulation of rice analog with hedonic score, then characterize selected analog rice product. Several phases of the study were production and characterization of lindur fl our; formulations of rice analog; and characterization of selected product. Th e results showed that the content lindur fl our contained carbohydrate (86.10%), tannin (0.21%), amylose (29.96%), total sugar (14.75%), and HCN (1.98 ppm). Th e best formulation of analog rice was combination of lindur fl our (70%), sago fl our (30%), and addition of chitosan (0.5%). Th e characteristic of selected analog rice contained physically carbohydrate (81.58%), density (0.80 g/mL), one thousand grain weights (18.08 g), amylose (20.36%), dietary fi ber (8.16%), gross energy (3,240 kal/g) and starch digestibility (55.22%).id
