Abstract: Th e purpose of this research was to determine the composition of nutrition, amino acids, taurin, macro and micro mineral, and vitamin B12 in fresh and dried jellyfi sh. Th e essential amino acids were arginine, leucine, valine, threonine, lysine, isoleucine, phenylalanine, methionine, and histidine, whereas non essential amino acids were glutamic acid, glysine, aspartic acid, serine, alanine, and tyrosine. Th e highest of essential amino acid in fresh and dried was arginine 1.72% (db) and 1.44% (db) and the lowest was histidine 0.19% (db) and 0.13% (db). Th e highest of non essential amino acid in fresh and dried are glutamic acid and glysin 3.26% (db) and 2.62% (db) and the lowest is tyrosine 0.38% (db) and 0.41% (db). Taurine in fresh was 2.68% (db) and dried 0.67% (db). Th e highest of macro mineral in fresh and dried was sodium 180,092.1 ppm (db) and 111,209.4 ppm (db) and the lowest was calcium 5,750.2 ppm (db) and 11.1 ppm (db). Th e highest of micro mineral in fresh and dried was iodium 8.291.5 ppm (db) and 1,800 ppm (db) and the lowest was copper 1.1 ppm (db) and 0.6 ppm (db). Vitamin B12 on fresh was 396.6 μm/100 g (db) and 63.5 μm/100 g (db) in dried.
