Title: Konsumsi Tempe, Tahu dan Kacang-kacangan pada Wanita Dewasa di Indonesia

Abstract: The purpose of this study was analyze the participation rate of consumption and the amount of consumption of tempe, tofu and legumes among Indonesian adult women aged 19-49 years. This study uses an electronic data files of Riskesdas 2010 collected by the Agency for Health Research and Development Ministry of Health, in the form of food consumption and socio economic data with a total of screened subjects of 23.345 adults women. Subjects were grouped by the age of 19-29 years and 30-49 years. Food consumption data collection using 24-hour recall method. Food consumption data, especially the consumption of legumes analyzed descriptively to determine participation rate that is expressed as a percentages of subjects consumed the food; and the amount of food consumption's for each type of legumes expressed in grams percapita perday. The results showed that the consumption of legumes adult women in Indonesia was 125.5 ± 80.9 gram/capita/day among subjects consumed. Consumption of legumes adult women (19-29 years) was slighlty lower than in order adult women (30-49 years), namely 121.3 ± 79.7 and 127.5 ± 81.5 gram/capita/day, respectively. Compared to the consumption of animal food, the amount of legumes consumption percapita perday is lower than animal food consumption. The results of the analysis of the consumption of eight types of legumes showed that the participation rate of consumption of green bean porridge, peanuts, beans and stringbeans, soy beans, tempe, oncom, tofu, and other beans are 1.2%, 4.5%, 0.9%, 0.4%, 57.8%, 0.5%, 32.8% and 1.9%, respectively. The participation rate of tempe is the highest among different types of legumes. The participation rate of legumes consumption was not different between the Two age groups of adults women. The intake of tempe and tofu 74.4 ± 46.0 and 79.9 ± 56.3 gram/capita/day, which is not much different between the two group of adult women.
