Abstract: Sorghum is one of cereal plant that has big potency as feed for sheep and goat. The objective of the research was to evaluate carcass quaiity of kacang goat and gamt sheep fed with concentrate contain sorghum grain. Total twelve kacang goat and gamt sheep were used for the research. Data of carcass quality were collected and analyzed by Analysis of COvariance (ANCOVA) with initial body weight, slaughter weight and half carcass from left side weight were used as co variable. Result shows that kacang goat had lower average daily gain (ADG) than gamt sheep (P<0.05). Carcass percentage of kacang goat with average slaughter weight 17.17 kg was 38.65% with percentage of lean, fat bone from carcass were 62.44%, 10,56% and 27% respectively. Whcreas carcass percentage of garut sheep with average slaughter weight 23 .70 kg was 40.55% with percentage of lean, fat bone from carcass were 60.48%, 16.71 % and 22.81 % respectively. In addition, the data for commercial carcass cuts showed that percentage of leg cut from kacang goat was significantly lower than garut sheep (P<O.OI), whereas muscle (lean) percentage of leg and shank cuts from kacang goat was significantly higher than garut sheep (P<O.OI). In contrast, rack cuts from kacang goat was significantly lower than garut sheep (P<O,OI). Bone percentage of shoulder, rack, loin and breast cuts were very significantly higher for kacang goat than garut sheep (P<O.OI).
