dc.description.abstractDiabetes Mellitus (DM) is a metabolism disorder disease signed by increasing of blood glucose (hyperglicemia) caused by insulin secretion disorder and or increase of insulin resistance. The purpose of this study was to develop a coffee product containing mahogany seeds (Swetenia mahagoni Jacq.) with good sensory as a fungtional drink for diabetic. Coffee product with the addition of 100 mg mahogany seed extract/serving size or 0.7% was chosen product (P<0.05). The selected coffee has water solubility 97.38% and bulk density 0.4854g/mL. The selected coffee contained 2.80% moisture, 5.88% ash, 1.08% fat, 6.04% protein, 84.20% carbohydrate, 0.96% total dietary fiber, 7.48% caffeine, and toxicity values347.097 ppm. GCMS analysis showed that selected coffe was contained Dodecanoic acid, 1,2,3 esters - propanetriyl, Octanoic acid , 1,2,3 - propanetriyl ester, and Esther Dodecanoic acid, 1 - ( hydroxymethyl ) -1.2 - ethanediyl. Based on this study it can be concluded that coffee with the addition of mahogany seed extract can be used as an alternative functional drink for diabeticen
