Abstract: Kebutuhan sumber protein asal hewan berupa daging ayam dan sapi terus meningkat. Tingginya harga daging sapi dan banyaknya permintaan daging ayam mendukung maraknya tindak pengoplosan daging sapi dengan daging celeng (babi hutan) dan penjualan ayam tiren. Selain itu, masyarakat Indonesia mengonsumsi organ visceral hewan (jeroan) seperti hati dan paru yang rentan terhadap bahaya kontaminasi dan kualitas yang buruk. Kukang merupakan kartu indikator yang ditujukan untuk memudahkan masyarakat dalam mengidentifikasi kualitas pangan asal hewan yang memiliki prinsip kerja pada perbedaan warna organ mewakili kualitas organ. Kukang terdiri dari indikator terhadap kualitas daging sapi, daging ayam, organ hati dan paru-paru. Pembuatan Kukang diawali dengan tahap pengumpulan sampel, kemudian dilanjutkan dengan identifikasi RGB sampel, tahap produksi Kukang, tahap uji coba, dan tahap demonstrasi produk. Kukang dinyatakan layak secara struktural maupun fungsional sebagai indikator kualitas produk asal hewan.
The need for protein sources derived from animal such as chicken and beef continues to rise. The high price of beef and chicken meat demand to support the rampant acts of mixing beef with the meat of wild boar (wild boar) and chicken selling tiren. In addition, the Indonesian people consume animal visceral organs (offal), such as the liver and lungs which are susceptible to the dangers of contamination and poor quality. Kukang is an indicator card that is intended to facilitate the community in identifying the quality of foods sources derived from animal which has the working principle of the color differences represent organ organ quality. Kukang consists of indicators on the quality of beef, chicken, liver and lungs. The manufacture of Kukang begins with sample collection stage, and then followed by the identification of the RGB sample, slow loris production phase, test phase, and the phase of product demonstrations. Kukang declared eligible structurally and functionally as an indicator of the quality of products sources derived from animal.
