Abstract: Sausage is one of meat products that many consumers demand. Sausage is a meat product that has a high nutrition value. Nutrient composition of sausages depend on the type of meat used, the processing, and the casing was used. Smoked sausage use intestine’s casing from beef. Sausage processing can use canola oil which reduces fat content of sausage. The treatments used in this experiments were three treatments such as 15% subcutan fat of cattle, 15% canola oil and 7.5% subcutan fat of cattle plus 7.5% canola oil. The results of this treatments showed no significant difference to pH, water absorption and aw value. Total production cost of sausage that used subcutan fat of cattle was Rp 106 796.28, canola oil Rp 105 986.28, and mixture between subcutan fat of cattle plus canola oil Rp 106 391.28.
