Abstract: Baby tilapia is easily obtained fish and be the current trend as food source. The purpose of this research was to determine the chemical and amino acid contents, and to observe the tissue in fresh baby tilapia fish at the range of 2-4 weeks age. The method of amino acid analysis used HPLC and tissue analysis used parafin. Chemical content of each age tend identical, ash and carbohydrate content increased significantly during 2-4 weeks. Glutamic acid composition was the highest of non esential amino acid in baby tilapia fish (7.75%; 7.17%; 6.7%). The highest esential amino acid was leusin (3.97%; 3.65%; 3.42%). Baby tilapia tissue showed that the muscle structure consists of ephitel, myomere, notochord, and myoseptum. Myomere in 2 week relatively small and less than 3 weeks and 4 weeks. Villi and mucus cells at 2 weeks developed, but has not appeared on the enterocyte cell.
