dc.description.abstractSandfish gives a lot of benefits in healthcare, it’s potentially to be used as a drug material. This study aimed to characterize capsule and tablet prepared from sandfish (Holothuria scabra) and to determine stability of the products during storage at different temperature. The result showed that the best formulas were F2 and F6 of tablets and the capsule. Sandfish tablets contained high protein, ranging between 20.15 – 45.26 % (wb). The stability test of sandfish tablets and capsules which stored at 30 °C and 50 °C was not different between the formulations, pH of the product was 6,47 to 6.97. The aw value of sandfish tablets and capsules ranged from 0.61 – 0.74. During the storage period in 30 days the number of bacteria was from 4.2 log cfu/g to 6.78 log cfu/g and number of fungi was from 4.51 log cfu/g to 6.6 log cfu/gen
