Abstract: An increasing demand of minimally processed aeroponic lettuce PT. X needs to maintain the quality and freshness of lettuce. This research aimed to obtain the best formula of Aloe vera gel to be applied as a coating to extend the shelf life of aeroponics lettuce PT. X. This research used by factorial design (4x2) with two factors that are, the ratio (gel:solvent) are without treatment, 1:1, 1:2 and 3:2; and the temperature storage are 10 0C and 26 0C, done in two times replication and assisted by software SPSS. The parameter include weight loss, percentage of damage, pH value, acid total, vitamin C and organoleptic test. The quality of lettuce that is coated with ratio 1:1, packaged with perforated polypropylen plastic, and storaged at low temperatures (10 0C) RH 85-90 % is best treatment. The analys result showed that treatment can prolong lettuce until 17 days and still accepted by the panelist in general.
