Abstract: Vegetable waste potentially to be processed into alternative forage. The recent feed technology used for vegetable waste were silage and wafer. The aim of the research was to evaluate the physical properties of wafer composed by fresh and silage vegetable waste during storage. Variables measured were moisture, water absorption, water activity, wafer density, and presences of the insect. Fresh vegetable waste wafer was high in moisture and water activity (aw) whereas lower in water absorption and wafer density than silage vegetable waste wafer. Factor of the wafer ingredient and storage periods were significantly different (p<0.05) to all variables. Interaction between the two factors were significant (p<0.05) in moisture, water absorption, and water activity but unsignificantly different (p>0.05) in wafer density. There was no insect founded in fresh and silage vegetable waste wafer during storage. Based on wafer physically changing during 12 weeks storage, silage vegetable waste wafer has a better quality than the fresh vegetable waste wafer.
Limbah sayuran berpotensi untuk diolah menjadi alternatif hijauan pakan. Teknologi olahan pakan yang cukup berkembang saat ini terhadap limbah sayuran adalah silase dan wafer. Tujuan penelitian ini adalah menguji kualitas fisik wafer limbah sayuran segar dan silase selama penyimpanan 12 minggu. Parameter yang diuji berupa kadar air, daya serap air, aktivitas air, dan kerapatan serta keberadaan serangga pada wafer. Wafer limbah sayuran segar memiliki kadar air dan aktivitas air yang lebih tinggi namun memiliki daya serap air dan kerapatan yang lebih rendah daripada wafer limbah sayuran silase. Faktor bahan penyusun wafer dan faktor priode penyimpanan menunjukkan perubahan yang nyata (p<0.05) terhadap semua parameter. Interaksi antar kedua faktor menunjukkan adanya perbedaan (p<0.05) terhadap kadar air, daya serap air, dan aktivitas air namun tidak berbeda (p>0.05) pada kerapatan. Tidak ditemukan adanya serangga pada wafer limbah sayuran segar dan silase selama penyimpanan. Berdasarkan perubahan kualitas fisik wafer selama penyimpanan 12 minggu, wafer limbah sayuran silase memiliki kualitas fisik yang lebih baik daripada wafer limbah sayuran segar.
