Abstract: Indonesia's population is ranked 4 in the world food and led to increase conventional foods that are not healthy anymore in the market to meet those needs. This resulted in the increasing number of patients with degenerative diseases. In the other hand people gradually began to realize and to make for the natural pattern of life "back to nature" by consuming organic food products. The objectives of this research are to analyse the factors that influence the Willingness to Pay (WTP) of organic vegetables for consumers and to calculate percentage of price WTP’s added for organic vegetables which will be spent by consumers. This research used analysis tools of descriptive, crosstab, logistic regression and the Contingent Valuation Method (CVM). Based on the results obtained, the factors that influence the WTP of organic vegetables for consumer are marital status, consumer’s age, familiy member’s and consumer’s awareness towards organic vegetables. The percentage of WTP price added which will be spent by consumers for each the various of vegetables selected in the research are WTP’s of : carrot 58,80%; cabbage lettuce 29,61%; broccoli 24,42%; cabbage flower 25,83%; cabbage 46,82% and pakchoy 19,97%
Populasi penduduk Indonesia yang menempati ranking 4 dunia menimbulkan peningkatan kebutuhan pangan bagi masyarakat yang mengakibatkan semakin banyaknya makanan konvensional yang tidak lagi sehat beredar di pasar untuk memenuhi kebutuhan tersebut. Hal ini mengakibatkan semakin meningkatnya jumlah penderita penyakit degeneratif. Namun lambat laun masyarakat mulai sadar dan menuju pola hidup yang alami “back to nature” dengan mengkonsumsi produk makanan organik. Tujuan penelitian ini adalah menganalisis faktor-faktor yang mempengaruhi Willingness to Pay (WTP) sayuran organik bagi konsumen dan menentukan presentase penambahan harga WTP sayuran organik yang bersedia dikeluarkan oleh konsumen. Penelitian ini mnggunakan alat analisis deskriptif, crosstab, regresi logistik dan Contingent Valuation Method (CVM). Berdasarkan hasil yang diperoleh, faktor-faktor yang mempengaruhi WTP sayuran organik bagi konsumen meliputi status pernikahan, usia konsumen dan jumlah anggota keluarga serta kepedulian konsumen terhadap sayuran organik. Persentase penambahan harga WTP yang dikeluarkan oleh konsumen untuk masing-masing sayuran yang dijadikan obyek penelitian adalah WTP produk wortel 58,80%; selada 29,61%; brokoli 24,42%; kembang kol 25,83%; kol 46,82% dan pakchoy 19,97%.
