Title: Pembuatan Soft Candy dengan Bahan Aktif Oleoresin Temulawak (Curcuma xanthorhiza Roxb.)

Abstract: Curcuma is a medicinal plant in the form of quasi-trunked clump of plants. Based on the research and experience, turmeric has proven efficacious in curing various diseases. Pharmacological effect provided by curcuma not be separated from the role of active compound contained in the rhizome of curcuma. The active substance contained in curcuma is divided into two main factions of dyes curcuminoids and volatile oil. Soft candy is soft-textured confectionery, processed by adding components such hidrokoloid agar, gum, pectin, starch, carrageenan, gelatin, used for the modification of products so that the texture is rubbery. The purpose of this study was to obtain soft candy making formulations with active ingredients oleoresin curcuma (Curcuma xanthorhiza Roxb.) as well as examine the product to the consumer acceptance. The experimental design used was completely randomized design with two factors namely the concentration of sorbitol (A) and concentration of curcuma oleoresin (B). each level consists of three levels, to concentrations of sorbitol (A) was 75% (A1), 77% (A2), and 79% (A3) while the concentration of ginger oleoresin (B) is 0.125% (B1), 0.25% (B2), and) 0.375% (B3). This study consists of two parts, namely the preliminary study and main study. In a preliminary study to test and compare the characteristics of curcuma oleoresin and sorbitol concentration of curcuma oleoresin to be used in primary research. In the preliminary study of curcuma oleoresin yield obtained for 11.12%, with the content of curcumin 9.55% and xantorizol 26.83%. In determining the concentration of oleoresin of curcuma is added, based on taste test of curcuma oleoresin obtained is added of 0.25% are preferred. In a major study found that test moisture content in the highest value of products possessed by treatment A3B3, which is 14.52% while the lowest water content was obtained by treatment of A1B1, which is 11.89%. The highest ash content resulting from the treatment A2B1, which is 1.739% and the lowest ash content was obtained by treatment of A2B3, which is 1.505%. Toxicity tests that do not have the capability of bioactive formulations having LC50 values greater than 1000 ppm. From the sensory test showed that the product of interest is the formulation of A1B2 (75% sorbitol, 0.25% of curcuma oleoresin).
