Abstract: Javan porcupine (Hystrix javanica) is an endemic animal in Java Island and endangered species due to hunting by local communities for commercial purpose. To support conservation of the species is domestication through ex-situ breeding. The objective of this study was to examine the influences of pelleted concentrate (koi fish feed) to the animal rations on the physical quality of meat and muscle microstructure of javan porcupine. To observe physical meat quality, the meat sample was taken from leg and to measure muscle microstructure the meat sample was taken from loin. Physical quality of meat includes meat color, fat color, pH value, tenderness, cooking loss, and water holding capacity. Muscle microstructure includes muscle fibre diameter, fasciculi diameter, and thickness of connective tissue. Data of treatment effect was analyzed descriptively. The results showed that meat colour of Javan porcupine was pinkish color, fat colour was white, pH values were in the normal range (5.6), range of cooking loss were relatively high (53-54%), level of tenderness were very soft (1-2 kg/cm2), and water holding capacity were relatively low (30.22-34.18 % mgH2O). The results of muscle miscrostructure suggest that muscle fiber diameter was in the range 22.7-24.45 μm, fasciculi diameter was in the range 0.67-1.07 μm and thickness of connective tissue ranged from 0.13-0.17 μm.
Landak Jawa (Hystrix javanica) merupakan salah satu satwa endemik di Pulau Jawa dan termasuk satwa yang terancam punah karena sering diburu oleh masyarakat lokal untuk tujuan komersil. Di Indonesia, khususnya di Jawa Tengah dan Jawa Timur, landak banyak diburu untuk dikonsumsi daging, hati, dan empedunya untuk mencegah osteoporosis, mengobati penyakit asma dan dapat meningkatkan vitalitas tubuh, duri landak juga dapat digunakan untuk cinderamata atau obat sakit gigi. Tingginya nilai dan manfaat bagi masyarakat inilah yang menyebabkan populasi landak Jawa semakin menurun. Status landak di Indonesia adalah dilindungi sebagaimana yang tercantum pada undang-undang No. 5 tahun 1990 tentang Konservasi Sumber Daya Alam Hayati dan Ekosistemnya dan Peraturan Pemerintah No. 7 tahun 1999 tentang Pengawetan Jenis Tumbuhan dan Satwa. Salah satu upaya penyelamatan untuk mendukung konservasi dan menjadikan landak jawa sebagai hewan budidaya yaitu melalui usaha penangkaran (konservasi ek-situ). Lingkungan yang kondusif dan pemberian pakan yang cukup merupakan faktor terpenting dalam budidaya landak jawa sebagai satwa harapan penghasil daging. Oleh karena itu, tujuan dari penelitian ini adalah untuk mengetahui sifat fisik daging.
