Abstract: | Nizam Zachman Jakarta Ocean Fishing Port (PPSNZJ) is one of the harbors which havea large fishing activity. The efforts in supporting the activities of fishing, processing and marketing of these products, PPSNZJ have the supporting infrastructure in the form of industry/company in it. Tuna is one of Indonesia's fishery commodities high values so as to penetrate the international market. Therefore, tuna requires good handling that quality is maintained. One element assessment of high-value fish products is the level of freshness. The level of freshness of fish associated with the speed and the handling of fish, ranging from demolition to be done packing stage. To improve efficiency opportunities tuna handling time, should first know the critical pathways that occur during the process of treatment in order to do repairs in order to obtain better efficiency values. This research was observed during period January to March 2012 at Nizam Zachman Jakarta Ocean Fishing Port, that were at Transit 16 and Industrial Loin (PT. Awindo International). The method was used case study, where did the analysis networking Critical Path Method (CPM). The result analysis showed that stream work in the tuna industry can already be said efficient with efficiency opportunities time in fresh tuna management industry that was 94,06% and efficiency opportunities time in loin tuna management industry that was of 90,66%. There are several alternatives offered to boost efficiency opportunities at some critical path is found, including the addition of labor and handling facilities, such as the weighing instrument. Pelabuhan Perikanan Samudera Nizam Zachman Jakarta (PPSNZJ) merupakan salah satu pelabuhan yang memiliki aktivitas perikanan yang besar. Adapun upaya dalam menunjang kegiatan perikanan, pengolahan dan pemasaran produk ini, PPSNZJ memiliki sarana dan prasarana pendukung berupa industri/perusahaan di dalamnya.Ikan tuna merupakan salah satu komoditas perikanan Indonesia yang bernilai jual tinggi sehingga mampu menembus pasar Internasional. Oleh karena itu, ikan tuna memerlukan penanganan yang baik agar kualitasnya tetap terjaga. Salah satu unsure penilaian suatu produk perikanan bernilai tinggi adalah tingkat kesegarannya. Tingkat kesegaran ikan terkait dengan kecepatan dan proses penanganan ikan, mulai dari dilakukan pembongkaran hingga tahapan pengemasan. Untuk meningkatkan peluang efisiensi waktu penanganan tuna ini, hendaknya terlebih dahulu mengetahui jalur-jalur kritis yang terjadi saat proses penanganan agar dapat dilakukan perbaikan sehingga diperoleh nilai efisiensi yang lebih baik. Penelitian dilakukan pada bulan Januari hingga Maret 2012 di PPSNZJ bertempat di Industri tuna segar/tuna landing center yaitu Transit 16 dan indutri tuna loin (PT. Awindo International). Metode penelitian yang digunakan adalah metode studi kasus yaitu melakukan analisis jaringan kerja Critical Path Method (CPM). Hasil penelitian menunjukkan bahwa aliran kerja di industri tuna segar dan industri tuna loin sudah bisa dikatakan efisien dengan peluang efisiensi waktu penanganan di industri tuna segar sebesar 94,06% dan peluang efisiensi waktu penanganan di industri tuna loin sebesar 90,66%. Ada beberapa alternatif yang ditawarkan untuk meningkatkan nilai peluang efisiensi tersebut pada beberapa jalur kritis yang ditemukan, diantaranya dengan penambahan tenaga kerja dan fasilitas penanganan, seperti alat penimbangan. |
