Abstract: The objective of this research was to study the effect of diet containing beef curry and offal on profile triglyceride, blood cholesterol and physiological responses of wistar rats. Fourteen male LMR-wistar rats, 50-65 grams of body weight age 28 days and 5 weeks of age were used in this research. The rats divided into two groups. First group (P0) consisted of seven rats fed with casein diet and second (P1) consisted of seven rats fed with beef curry and offal. Before this research began, rats were adapted for 5 days and fed basal diet that consisted of casein, and treatment would take 20 days. Feed and water diet were given ad libitum. The experimental design that used in this research was complete randomized design for the blood analysis and subsampling on complete randomized design for physiological responses. The result of this study showed that diet treatment cause no significant effect to blood cholesterol of level, high density lipoprotein-cholesterol (HDL-cholesterol), low density lipoprotein-cholesterol (LDL-cholesterol), triglyceride, atherogenic index (AI); and also physiological responses of breath rate (respiration), heart rate, and body temperature.
Konsumsi daging bagi sebagian masyarakat cenderung dikaitkan dengan peningkatan kolesterol tubuh yang dapat memicu munculnya penyakit degeneratif, yaitu penyakit yang diakibatkan oleh penurunan kondisi metabolisme tubuh karena faktor pertambahan usia (umur), seperti: penyakit jantung koroner, stroke, atherosklerosis dan pembuluh darah. Kondisi ini dapat memunculkan opini negatif masyarakat untuk takut (fobia) terhadap kolesterol yang berasal dari daging merah, sehingga hal ini akan berdampak terhadap perkembangan subsektor peternakan umumnya dan terhadap ternak ruminansia khususnya (daging sapi dan jeroan). Penelitian ini bertujuan untuk mempelajari pengaruh konsumsi gulai daging sapi berlemak yang ditambah jeroan terhadap profil lemak dan kolesterol darah tikus serta kaitannya sebagai pemicu penyakit jantung dan penyakit pembuluh darah.
