Abstract: The ability of phage FR38 to lysis an indigenous Salmonella P38 from faeces of diarrhea patient has been studied, however its effects on food and its safety are not studied yet. This study was conducted to observe the effects of phage FR38 on food, and its safety in using of the phage on food. Lysis efectivity of phage FR38 on food were measured on sausage, milk, and water. After phage's treatment on sausage, milk, and water, the total colony of Salmonella P38 was counted by surface plate method. Twelve male Sprague-Dawley rats were used for measure of phage's safety. Those rats were divided into two group; (i) control and (ii) treated with phage FR38’s 5 ml/kg bw (1 ml = 1.59 x 107 pfu phage). The phage treatment was administered by phage intragastricly. The clinical symptoms were observed at 15 days after treatment. The result showed that indigenous phage FR38 had been able to decrease of indigenous Salmonella P38 on fresh sausage, milk, and water (0,01). The body weight, organ weight, erythrocyt, hematocrit, hemoglobin, leukocyte, total protein, creatinine, SGOT, SGPT of phage’s treatment rat were not different with control on 16th day (P > 0.05). It can be concluded that no effect of phage FR38 on body weight, blood chemistry, kidney, liver functions (0,01) and histology of the rat.
