dc.description.abstractThe study was conducted at PT GIA, one of local flavour companies in Indonesia, which had difficulties in implementing halal certification of new flavour products or the extension of flavour products that previously had already got the certification of halal. There must have been Halal Assurance System (HAS) before implementing the halal certification of flavour with the aim that certified flavour products gain halal assurance continuously. The purpose of this study was to design of Manual Halal Assurance System (HAS Manual) at PT GIA. The expected benefits were to help the flavor company in designing the HAS compilation for the needs of flavour certification to LPPOM MUI and to give information to LPPOM MUI about the conditions of PT GIA in terms of ensuring halalness of flavour products from raw materials selection, production processes, storage and delivery to customers. HAS Manual was expected to be a form of empowerment of domestic flavour companies so that they were able to compete in Indonesia market that was predominantly Islamic religious who were in needs of collateral for halal products consumed. The study was conducted in two steps. In the first step, a problem analysis was carried out to identify problems faced by PT GIA in halal certification of its products. In the second step, a halal assurance system manual was designed. It was recognized that the main problem faced by PT GIA was the company did not have a halal assurance system. As a result, the company was not able to comply the halal certification requirements. In this study, a halal assurance system manual was developed. This manual consisted of components as required by the halal certification body (LP POM MUI). Nineteen Standard Operating Procedures were established to support the implementation of halal assurance system at PT GIA.en
