dc.description.abstractCharacteristic of inventory for perishable products is the product can not be kept forever. Especially for fresh fruit, their inventory system have limited shelf-life and a decline in quality over the whole period of inventory. The aim of the research were to develop inventory systems in mango var.Gedong Gincu supply chain. Inventory system is built on exporter level of mango var Gedong Gincu for export purposes with due respect to reduction in fruit quality. Inventory at the exporter level was modeled by mathematical equation. The model was developed based on Economic Order Quantity (EOQ) model. The phenomenon of quality deterioration of fresh fruit followed an exponential degradation rate, approximated by the equation π‘„π‘’π‘Žπ‘™π‘–π‘‘π‘¦ 𝑑 =πΌπ‘›π‘–π‘‘π‘–π‘Žπ‘™ π‘žπ‘’π‘Žπ‘™π‘–π‘‘π‘¦ π‘’βˆ’π‘‘π‘‡. The model developed in this study can be used to determine the optimal quantity of mango var. Gedong Gincu that was ordered for export with due respect to deterioration during periods of stock.In inventory management at the exporter level, the model can be used to determine the optimal number of orders gedong gincu on exporters with due respect to the level of quality and reduction in weight over a period of inventory. Output model of the optimum order quantity (Q*) at room temperature storage, the storage temperature of 13 Β°C and storage temperature of 10 Β°C), is 0,6 tons per day; 1,2 tons per day and 1,4 tons per day, respectively. In order to meet the needs of exporters, gapoktan can make improvements appropriate postharvest handling along supply chain of mango var. Gedong Gincu postharvest handling can be done at the farm level such as by removing the heat field to minimize weight loss of fruit and maintain the flow of sap from the fruit skin by leaving a stalk 1-2 cm when picking.en
dc.description.abstractKendala utama dalam sistem persediaan untuk komoditas hasil pertanian adalah umur simpan. Umumnya, model-model persediaan yang dibangun dalam sistem persediaan mengasumsikan bahwa produk memiliki umur simpan tidak terbatas sehingga dapat disimpan selama-lamanya untuk memenuhi permintaan di masa datang. Kenyataannya, produk mempunyai umur simpan terbatas karena mengalami perubahan dalam penyimpanan akibat penurunan mutu, kerusakan dan keusangan (obsolescence). Untuk produk hasil pertanian, selain aspek musiman dan kamba, aspek mudah rusak (perishable) menjadi faktor penting dalam sistem persediaan komoditas hasil pertanian. Khusus untuk produk segar, misalnya buah segar, aspek penurunan mutu dan susut bobot yag menunjukkan tingkat kesegaran (freshness) merupakan parameter mutu kritis yang dijadikan pertimbangan dalam mempertahankan mutunya. Mangga gedong gincu merupakan salah satu produk yang termasuk dalam klasifikasi produk yang tidak tahan lama dalam penyimpanan (perishable product), dimana akan terjadi penurunan mutu dalam waktu tertentu. Setelah dipanen, buah mangga tetap melakukan kegiatan metaboliknya seperti respirasi dan transpirasi yang dapat menyebabkan perubahan fisikokimia buah pascapanen, seperti proses pematangan, pembentukan aroma dan kemanisan, pelunakan daging buah dan penurunan nilai mutu. Kondisi tersebut memerlukan kebijakan yang tepat untuk mendukung sistem persediaannya.
