| Abstract: | The aim of this research was to obtain information about method and type of iodine reagent, which can be used in synthesis of iodized oil from red palm oil. Achievement of this goal had been conducted by production and characterization of red palm oil from crude palm oil, followed with selection of method and type of iodine reagent. Selected method consisted of dry method (surface and electrolysis methods) and wet method, while selected reagent included: iodine in potassium iodide (I2/KI) and potassium iodide (Kl). Production of red palm oil resulted in the yield of 62%.. Concentration of unsaturatedfatty acid was higher than crude palm oil, and had better physico-chemical properties than crude palm oil. Wet method was the best method to produce iodized oil, while dry method did not yield iodized oil. KI reagent yield iodized oil contained iodine higher than I2/KI reagent, that were 648 ppm and 216 ppm, respectively, as well as ((-carotene content of iodized oil, which were 66 ppm and 45.43 ppm. In conclusion potassium iodide was better than I2/KI in synthesis of iodized oil from red palm oil. |
