dc.description.abstractJapanese cucumber is one of the potential of agricultural products grown for export purposes. There is a large variation in quality of the fresh Japanese cucumber so we need evaluation method to evaluate without damaging Japanese cucumber. Ultrasonic is one of the method that can be used to determine the quality of Japanese cucumber and other agricultural products. Using ultrasonic method the acoustic properties of Japanese cucumber such as velocity, attenuation and zero moment were determined. In addition to acoustic properties, other parameters measured were physical and chemical properties of Japanese cucumber that is hardness, total dissolved solids and density were also measured. Japanese cucumbers are used in this research of 150 pieces with different harvest age of 25, 30, 35, 40 and 45 days. The result show that there is relationship between ultrasonic and physic chemical properties. It can be concluded that the parameters can be used as the basis for determining the quality of Japanese cucumber. From the research results, ultrasonic velocity can be used as the basis for determining the hardness of Japanese cucumberen
