Abstract: Shrimp shell waste can be used to make chitosan. Rheological properties of chitosan were improved by gelation using glutaraldehyde and natural hydrocolloids such as carboxymethyl cellulose (CMC). Rheological properties measured were strength, break point, rigidity, swelling, and shrinking properties.
