| dc.description.abstract | The aim of this research was to .tudy the variation of 8helf-life Value8, obtained in quanti/yiTIII 8helf-life of biscuifB amoTIII modelB of accelerated .toT'OlJe 8tudie8 (ASS) from unidirectional Fick'S law. Shelf-life of biscuit8 is defined aa the leTllIth of time of a packaged biscuits Can be stored before the onset quality cha7llIe appear8. Four modelB: Heiss-Eichner (1971), Labuza (1988), Rudolph (1986) and Half Value Period or HVP model (Syarief, 1986) were evaluated. The8e modelB 8hared a common baaic principle that they were all derived and developed from unidirectional Fic1e '8 law. Therefore, each parameter of individual model can be compared to the athers. A semi empirical approach usiTIII reaction kinetics through Arrhenius plot was used aa a real8helf-life value.. . Quantification re8ulted in two categOrie8 of 8helf-life value8, Fir8t those which higher than expected value and second, were lowe~ than eXpected. 1 . Parameter evaluation of components of Heis8-Eichner and Labuza modelB clearly 8hown le88 in number than components of Rudolph and HVP modelB. This led to a conclusion that the more sophisticated modelB gave higher 8helf-life values aa compared to the Arhenius model. | id |
