Abstract

Fish processing unit activities is one of commodity industry which is potential to develop as a great source of national territorial waters. Nevertheless, there are many problems in developing this industry, such as raw material production aspect, sanitation and hygiene. Purpose of the research were to design the development of fish industrial product, the research consisted of 3 main steps: 1. Identifying the production of captured fisheries as a source of raw material used for fish processing unit activities. 2. Determining the main product of captured fisheries. 3. Determining the development pattern design of fish processing unit activities. Based on the analysis, potential commodities of Cilacap regency were multi species fish. Potential commodities of Pelabuhanratu – Sukabumi Regency were eaglerays fish. Potential commodities of DKI Jakarta Province were shark fish and potential commodities of Cirebon Regency were eaglerays fish. Prime product of Cilacap Regency is surimi of multi species fish, surimi of eaglerays fish from Pelabuhanratu – Suka bumi Regency, surimi of shark fish from DKI Jakarta Province and surimi of eaglerays fish from Cirebon Regency.
