| Abstract: | Pakcoy merupakan salah satu komoditas hortikultura yang dibudidayakan Sukabumi. Maya Wortel memiliki pemasalahan pada komoditas pakcoy yaitu sisa hasil panen pakcoy yang belum di manfaatkan secara optimal. Penelitian ini bertujuan untuk merumuskan dan menyusun kajian pengembangan bisnis yaitu pendirian unit bisnis pangsit pakcoy pada Maya Wortel. Metode yang digunakan pada penelitian ini adalah analisis kuantitatif, analisis konjoin, proyeksi laba rugi, dan analisis kelayakan investasi (NPV, IRR, net B/C, gross B/C, dan payback period). Penelitian dilakukan pada bulan Agustus 2024 hingga Januari 2025 berlokasi di Kota Sukabumi. Berdasarkan perhitungan NPV>0 yaitu sebesar Rp 55.178.080, pada perhitungan IRR>tingkat suku bunga yaitu 106% lebih besar dari tingkat suku bunga yang digunakan 3%. Nilai Net B/C yang diperoleh dari pendirian unit bisnis pangsit pakcoy yaitu 4,71. Gross B/C pada pendirian unit bisnis pangsit pakcoy sebesar 1,11. Payback period < umur bisnis yaitu 1 tahun 11 bulan. Berdasarkan hasil analisis konjoin pada pendirian unit bisnis pangsit pakcoy kombinasi level atribut yang menjadi preferensi konsumen adalah pangsit pakcoy dengan bentuk persegi panjang dengan tekstur krispi biasa, serta kondisi kandungan keripik yang tidak berminyak. Harga Rp 18.000 dan memiliki massa 250 g. Pakcoy is one of the horticultural commodities cultivated in Sukabumi. Maya Wortel has a problem with pakcoy commodities, namely the remaining pakcoy harvest that has not been optimally utilized. This research aims to formulate and compile a business development study, namely the establishment of a pakcoy dumplings business unit at Maya Wortel. The methods used in this research are quantitative analysis, conjoin analysis, profit and loss projection, and investment feasibility analysis (NPV, IRR, net B/C, gross B/C, and payback period). The research was conducted from August 2024 to January 2025 located in Sukabumi City. Based on the calculation of NPV>0 which amounted to IDR 55.178.080, in the calculation of IRR>interest rate which is 106% greater than the interest rate used 3%. The Net B/C value obtained from the establishment of the pakcoy business unit is 4,71. Gross B/C on the establishment of the pakcoy dumplings business unit amounted to 1.11. Payback period < business life is 1 year and 11 months. Based on the results of conjoin analysis on the establishment of the pakcoy dumplings business unit, the combination of attribute levels that consumers prefer is pakcoy dumplings with a rectangular shape with a regular crispy texture, and the condition of the dumplings is not oily. The price is IDR 18,000 and has a mass of 250 g. |
