This study aims to determine the amount of E. coli and S. aureus contamination and analyze the relationship between characteristic factors and practices with the presence of E. coli and S. aureus in salted fish (Decapterus sp.) sold at Cirebon City Market. A total of 18 samples were randomly collected from 9 salted fish vendors at Cirebon City Market. In this study, microbiological testing and questionnaire collection were conducted among the vendors. Quantitative testing for E. coli was performed using the MPN (Most Probable Number) method, while S. aureus was tested using the plate count method. Data analysis was conducted descriptively, and the relationship between vendor characteristics and the presence of E. coli and S. aureus was analyzed using the Fisher's Exact Test. From the results of the study on dried fish, 14 samples of dried fish were found to be positive for E. coli. Meanwhile, 10 out of 18 samples of dried fish were positive for S. aureus, showing contamination levels below the maximum limit set. Factors influencing the growth of E. coli in dried fish include the origin of the fish and the selling location. |
