dc.description.abstractSanitasi merupakan proses penting dalam industri pangan untuk mencegah kontaminasi mikroba pada peralatan. PT Aerofood Indonesia menggunakan larutan klorin 100 ppm sebagai bahan desinfektan yang digunakan berulang selama satu shift. Penelitian ini bertujuan untuk mengevaluasi efektivitas penggunaan berulang larutan klorin terhadap jumlah Escherichia coli dan Coliform pada permukaan talenan. Pengujian dilakukan dengan metode swab dan penanaman pada media Chromatic Coli Coliform, dengan lima perlakuan waktu (0, 2, 4, 6, dan 8 jam). Hasil menunjukkan tidak adanya pertumbuhan E. coli pada semua perlakuan, namun jumlah Coliform mulai terdeteksi pada perlakuan 4 jam dan meningkat signifikan pada 6 jam dan 8 jam. Hasil chlorine paper test menunjukkan penurunan kadar klorin seiring waktu, ditandai dengan memudarnya warna indikator. Uji statistik Kruskal-Wallis menunjukkan perbedaan signifikan jumlah Coliform antar perlakuan. Temuan ini menunjukkan bahwa efektivitas klorin menurun setelah dua jam penggunaan. Oleh karena itu, larutan klorin perlu diganti setiap dua jam untuk menjaga efektivitas sanitasi.-
dc.description.abstractSanitation is an crucial process in the food industry to prevent microbial contamination on equipment. PT Aerofood Indonesia uses 100 ppm chlorine solution as a disinfectant that is reused throughout a single shift. This study aimed to evaluate the effectiveness of repeated chlorine solution use on the number of Escherichia coli and Coliform found on cutting board surfaces. Testing was carried out using the swab method and inoculation on Chromatic Coli Coliform media, with five treatment durations (0, 2, 4, 6, and 8 hours). The results showed no growth of E. coli in all treatments, while Coliform colonies began to appear at 4 hours and increased significantly at 6 and 8 hours. The chlorine paper test results indicated a decline in chlorine concentration over time, marked by a fading indicator color. Kruskal–Wallis statistical analysis showed significant differences in Coliform counts among the treatments. These findings suggest that chlorine effectiveness decreases after two hours of use. Therefore, chlorine solution should be replaced every two hours to maintain sanitation effectiveness.-
