Abstract: Hasil samping ekstraksi bawang merah pada industri pangan memiliki karakteristik unik namun belum dimanfaatkan secara optimal. Penelitian ini bertujuan untuk mengkarakterisasi pupuk organik cair dari lindi hasil pengomposan ampas bawang merah serta menyusun model kemitraan pengomposan skala kecil. Sampel lindi dianalisis terhadap parameter pH, unsur hara makro, C-organik, kadar minyak, serta cemaran mikrobiologi berupa Escherichia coli dan Salmonella sp. Hasil analisis menunjukkan bahwa seluruh sampel memiliki pH sesuai baku mutu, namun kandungan C-organik, unsur hara makro dan cemaran mikroba masih berada di bawah standar minimum Keputusan Menteri Pertanian Nomor 261 Tahun 2019. Kadar minyak terdeteksi <0,1 mg/L. Hal ini menunjukkan bahwa lindi dari pengomposan ampas bawang merah belum memenuhi kriteria sebagai pupuk cair. Model kemitraan dirancang dengan skema bagi hasil antara PT XYZ dan mitra eksternal. PT XYZ berperan dalam penyediaan bahan baku dan investasi sedangkan mitra pengolah kompos menyediakan lahan, menanggung biaya operasional, dan menjual produk kepada PT XYZ dengan opsi penjualan ke offtaker lain atas persetujuan PT XYZ.
The by-products of shallot extraction in the food industry have unique characteristics but have not been optimally utilized. This study aims to characterize liquid fertilizer from the leachate of shallot waste composting and to develop a small-scale composting partnership model. The leachate samples were analyzed for pH, macro nutrients, organic carbon, oil content, and microbiological contamination in the form of Escherichia coli and Salmonella sp. Analysis results showed that all samples met pH standards, but organic carbon content, macro nutrient levels, and microbial contamination remained below the minimum standards set by Ministry of Agriculture Decision No. 261 of 2019. This indicates that leachate from shallot waste composting does not yet meet criteria as a liquid fertilizer. The partnership model was designed with a scheme between PT XYZ and external partners, where PT XYZ is responsible for providing raw materials and investment. while the partners provide land, cover operational costs, and sell the product to PT XYZ with the option to sell to other offtakers with PT XYZ's approval.
