Abstract: PT Bukit Baros Cempaka merupakan perusahaan pengolahan susu menjadi keju, yang setiap harinya menghasilkan limbah organik dalam jumlah besar. Salah satunya yaitu limbah whey sebagai hasil samping dari proses produksi keju. Limbah whey yang dihasilkan belum dimanfaatkan secara optimal dan langsung dibuang, yang dapat berdampak pada lingkungan. Pemanfaatan whey keju Gouda menjadi pupuk organik cair merupakan upaya dalam mengurangi limbah industri dan menciptakan produk bernilai tambah. Penelitian ini bertujuan untuk menganalisis nilai tambah usaha, menyusun perencanaan usaha berdasarkan aspek non finansial, dan mengevaluasi keuntungan usaha berdasarkan aspek finansial. Metode yang digunakan mencakup analisis nilai tambah Hayami, analisis aspek pasar, produksi, organisasi, manajemen, kolaborasi, serta analisis aspek finansial laba rugi dan R/C ratio. Hasil penelitian menunjukkan bahwa usaha ini menguntungkan untuk dijalankan berdasarkan analisis nilai tambah Hayami, analisis aspek non finansial, dan aspek finansial. Pemanfaatan whey menjadi pupuk organik cair tidak hanya memberikan solusi pengelolaan limbah tetapi juga berpotensi sebagai unit usaha baru yang mendukung keberlanjutan dan efisiensi produksi di perusahaan.
PT Bukit Baros Cempaka is a milk to cheese processing company, which produces large amounts of organic waste every day. One of them is whey waste as a by product of the cheese production process. The whey waste generated has not been optimally utilized and is directly disposed of, which can have an impact on the environment. Utilization of Gouda cheese whey into liquid organic fertilizer is an effort to reduce industrial waste and create value-added products. This study aims to analyze the added value of the business, develop a business plan based on non financial aspects, and evaluate the business profitability based on financial aspects. The methods used include Hayami added value analysis, analysis of market, production, organizational, management, collaboration, as well as financial analysis of profit and loss and the R/C ratio. The results showed that the business is profitable based on Hayami's value-added analysis, non-financial aspects, and financial aspects. The utilization of whey into liquid organic fertilizer not only provides a waste management solution but also has the potential as a new business unit that supports the sustainability and efficiency of production in the company.
