| Abstract: | Asupan gizi tidak memadai selama 1000 Hari Pertama Kehidupan menjadi faktor utama tingginya prevalensi stunting di Indonesia sehingga strategi penyediaan Makanan Pendamping ASI (MP-ASI) padat gizi dibutuhkan terutama dengan kandungan gizi yang memenuhi kebutuhan. Ikan wader adalah ikan air tawar lokal yang tinggi protein dan mineral, tetapi pemanfaatannya masih terbatas. Penelitian ini bertujuan mengembangkan galantin substitusi ayam dengan ikan wader sebagai MP-ASI bagi balita usia 12-24 bulan. Metode yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan tiga taraf perlakuan berdasarkan rasio ayam:ikan wader, yaitu F1 (90:10), F2 (80:20), dan F3 (70:30). Formula terpilih pada penelitian ini adalah F2. Satu takaran saji (80 g) galantin F2 mengandung 136 kkal energi, 13,1 g protein, 2,4 g lemak, 15,5 g karbohidrat, 17,45 mg kalsium, 0,51 mg zat besi, dan 0,62 mg seng yang berkontribusi terhadap AKG sebesar 10,1% energi, 65,5% protein, dan 20,8% seng untuk balita usia 1–3 tahun sehingga memenuhi kriteria klaim gizi “tinggi protein” dan “sumber seng”. Estimasi skor asam amino galantin semua formula berada di atas 100% dengan valin sebagai asam amino pembatas. Estimasi harga jual galantin adalah Rp7.200,00 per takaran saji. Inadequate nutritional intake during the first 1000 days of life is the main factor in the high prevalence of stunting in Indonesia. A strategy to provide nutrient-dense complementary foods that meet the needs is needed. Wader fish is a local freshwater fish high in protein and minerals, but its utilization remains limited. This study aimed to develop galantin substitution of chicken with wader fish as complementary food for toddlers aged 12-24 months. A Completely Randomized Design (CRD) was employed with three treatments based on the chicken and wader fish ratio: F1 (90:10), F2 (80:20), and F3 (70:30). F2 was the selected formula in this study. One serving (80 g) of F2 galantin contains 136 kcal of energy, 13.1 g of protein, 2.4 g of fat, 15.5 g of carbohydrates, 17.45 mg of calcium, 0.51 mg of iron, and 0.62 mg of zinc, contributing 10.1% of energy, 65.5% of protein, and 20.8% of zinc to the RDA for children aged 1–3 years. Thus, it meets the nutrient claim criteria as “high in protein” and “a source of zinc”. The estimated amino acid score of all formulas is above 100%, with valine as the limiting amino acid. The estimated selling price of galantin is Rp7,200.00 per serving. |
