| Abstract: | Kualitas dan keamanan produk pangan menjadi isu penting global, terutama di Indonesia yang menerapkan Cara Produksi Pangan Olahan yang Baik (CPPOB) untuk memastikan keamanan pangan. PT XYZ sebagai perusahaan pengepakan minyak menghadapi tantangan dalam pemenuhan teknis dan dokumen untuk memperoleh Izin Penerapan CPPOB. Penelitian mengevaluasi penerapan CPPOB, mengidentifikasi kesenjangan terhadap 25 aspek persyaratan CPPOB, serta memberikan pendampingan perbaikan agar memenuhi standar BPOM. Hasil awal menunjukkan rating B, namun setelah pendampingan berupa penyusunan dokumen dan perbaikan sarana produksi dari Agustus 2024 hingga Januari 2025, PT XYZ berhasil memperoleh izin penerapan CPPOB yang diterbitkan oleh BPOM. Penelitian ini menunjukkan bahwa analisis kesenjangan dan pendampingan strategis efektif dalam meningkatkan kepatuhan terhadap CPPOB. Product quality and food safety are important global issues, especially in Indonesia, which implements Good Manufacturing Practices (GMP) to ensure food safety. PT XYZ, as an oil repackaging company, faces challenges in meeting the technical and documentation requirements to obtain the GMP Implementation Permit. This study evaluates GMP implementation, identifies gaps againts 25 GMP requirement aspects, and provides facilitating improvements to meet BPOM standards. Initial results showed a rating of B, however, after facilitating document preparation and production facility improvements from August 2024 to January 2025, PT XYZ successfully obtained the GMP Implementation Permit issued by BPOM. The study demonstrates that gap analysis and strategic facilitating are effective in improving compliance with GMP. |
