| Abstract: | Aplikasi edible coating untuk memperpanjang umur simpan buah dan sayur dapat dikembangkan dalam bentuk bubuk yang lebih praktis. Produk edible coating bubuk yang diformulasikan bersifat higroskopis dan rentan mengalami kerusakan mutu seperti perubahan warna akibat penyerapan uap air. Proyek ini bertujuan untuk menduga umur simpan edible coating bubuk, menentukan kondisi penyimpanan yang sesuai dengan karakteristik, dan menentukan jenis kemasan terbaik di antara aluminium foil, aluminized film, dan PET. Pendugaan umur simpan dilakukan menggunakan metode kadar air kritis dengan pendekatan model sorpsi isotermis pada RH 10-88%. Hasil proyek menunjukkan bahwa kurva sorpsi isotermis produk terpilih model Henderson dengan persamaan y = 0,0319+0,2473x tipe II bentuk sigmoidal. Hasil pendugaan menunjukkan kemasan aluminized film memberikan umur simpan terpanjang pada semua kondisi penyimpanan dan tidak memicu perubahan fisik pada edible coating bubuk sehingga direkomendasikan menjadi kemasan untuk menjaga stabilitas warna dan kualitas edible coating bubuk dengan umur simpan pada RH penyimpanan 84% dan sebesar 13,36 bulan menyesuaikan kondisi lingkungan nyata di lapangan atau packing house. Edible coating applications to extend the shelf life of fruits and vegetables can be developed in a more practical powder form. The formulated edible coating powder product is hygroscopic and prone to quality degradation, such as color changes due to water vapor absorption. This project aims to estimate the shelf life of the edible coating powder, determine storage conditions suitable for its characteristics, and identify the best packaging type among aluminum foil, aluminized film, and PET. The shelf life estimation was conducted using the critical moisture content method with an isothermal sorption model approach at RH 10–88%. The project results showed that the isothermal sorption curve of the selected product followed the Henderson model with the equation y = 0.0319 + 0.2473x, type II sigmoidal shape. The estimation results indicate that aluminized film packaging provides the longest shelf life under all storage conditions and does not cause physical changes in the edible coating powder, making it recommended as packaging to maintain the color stability and quality of edible coating powder with a shelf life of 13.36 months at 84% RH, respectively, aligning with real-world environmental conditions in the field or packing house. |
