Abstract: Perkembangan tren konsumsi kopi di Indonesia menunjukkan peningkatan yang signifikan. Salah satu inovasi yang berkembang saat ini adalah kopi specialty yang menawarkan cita rasa unik dan kompleks. Penelitian ini bertujuan untuk menganalisis preferensi konsumen terhadap atribut produk kopi specialty yang diproses menggunakan metode fermentasi anaerob serta merancang strategi pengembangan bisnis berdasarkan aspek finansial dan non-finansial pada CV Tri Anom Agrotektur. Analisis data dilakukan menggunakan model multiatribut fishbein dan analisis kelayakan finansial dan non finansial. Hasil penelitian menunjukkan bahwa atribut yang paling berpengaruh terhadap preferensi konsumen adalah rasa, aroma, dan kesesuaian harga dengan kualitas produk. Dari aspek finansial, pengembangan bisnis kopi specialty dinyatakan layak dijalankan dengan nilai NPV Rp136.642.458, IRR 39%, net B/C 2,19, gross B/C 1,13, dan payback period selama 3 tahun 1 bulan 20 hari. Temuan ini menunjukkan bahwa pengembangan kopi specialty fermentasi anaerob memiliki prospek menjanjikan dan dapat menjadi strategi bisnis yang kompetitif bagi CV Tri Anom Agrotektur.
The development of coffee consumption trends in Indonesia shows a significant increase. One of the innovations that is developing today is specialty coffee which offers unique and complex flavors. This study aims to analyze consumer preferences for the attributes of specialty coffee products processed using anaerobic fermentation methods and design business development strategies based on financial and non-financial aspects of Tri Anom Agrotektur's CV. Data analysis was carried out using the fishbein multiattribute model and financial and non-financial feasibility analysis. The results of the study show that the attributes that most affect consumer preferences are taste, aroma, and price compatibility with product quality. From the financial aspect, the development of the specialty coffee business is declared feasible with an NPV value of IDR 136,642,458, an IRR of 39%, net B/C 2,19, gross B/C 1,13, and a payback period of 3 years, 1 months, and 20 days. These findings show that the development of anaerobic fermented specialty coffee has promising prospects and can be a competitive business strategy for CV Tri Anom Agrotektur.
