dc.description.abstractKonsumsi makanan beku di Indonesia terus meningkat, termasuk produk olahan berbahan dasar sagu karena kepraktisannya. Pondok Sagu Metro berinisiatif untuk mengembangkan produk makanan beku siap berupa mi sagu frozen. Penelitian ini bertujuan mengevaluasi penerapan CPPOB pada sarana produksi, memberikan rekomendasi perbaikan, dan menyusun dokumen persyaratan izin penerapan CPPOB. Metode yang digunakan adalah analisis kesenjangan menggunakan checklist berdasarkan Keputusan Kepala Badan Pengawas Obat dan Makanan No HK.02.02.1.2.01.22.63 Tahun 2022 tentang Pedoman Pemeriksaan Sarana Produksi Pangan Olahan. Hasil evaluasi penerapan CPPOB menunjukkan bahwa terdapat 33 temuan yang terdiri dari 15 ketidaksesuaian minor dan 18 ketidaksesuaian major dengan skor 51 (rating C). Rekomendasi perbaikan dan dokumen persyaratan telah disusun dan dirangkum dalam bentuk Modul Penerapan CPPOB.-
dc.description.abstractFrozen food consumption in Indonesia continues to increase, including processed sago-based products due to their practicality. Pondok Sagu Metro has taken the initiative to develop a ready-to-cook frozen food product in the form of frozen sago noodles. This study aims to evaluate the implementation of GMP in the production facility, provide improvement recommendations, and compile the required documents for GMP implementation approval. The method used is a gap analysis based on a checklist derived from the Regulation of the Head of the Indonesian National Agency of Drug and Food Control No. HK.02.02.1.2.01.22.63 of 2022 concerning Guidelines for Processed Food Production Facility Inspection. The evaluation results indicate 33 findings, consisting of 15 minor and 18 major non-conformities, with a score of 51 (rating C). Recommendations and required documents have been compiled and summarized in the CPPOB Implementation Module-
